Creamy Crockpot Chicken Gnocchi Soup

Ingredients
• 1 lb boneless skinless chicken breasts
• 1 small onion, chopped
• 3-4 medium carrots, peeled and chopped
• 1-2 stalks celery, chopped
• 4 cloves garlic, minced
• 2 tsp dried basil
• 2 tsp Italian seasoning
• 1 tsp salt
• 10-12 cranks freshly ground black pepper
• 4 cups chicken broth
• 2 tbsp cornstarch
• 2 tbsp cold water
• 1 lb potato gnocchi (mini if available)
• 2 cans evaporated milk
• 2 cups fresh spinach
• Optional garnish: crumbled cooked bacon or fresh herbs

Instructions
• Place chicken, onion, carrots, celery, garlic, basil, Italian seasoning, salt, and pepper in a large crockpot.
• Pour chicken broth over ingredients. Cover and cook on low 6-8 hrs or high 4-5 hrs.
• Shred chicken directly in the crockpot or on a cutting board and return to pot.
• In a small bowl, whisk cornstarch with cold water to form a slurry.
• Add slurry, evaporated milk, and gnocchi to the crockpot. Stir, cover, and cook 20-30 mins until soup thickens and gnocchi is tender.
• Stir in spinach and let wilt 2-3 mins. Taste and adjust seasoning with salt and pepper.
• Serve warm, garnished with bacon or fresh herbs if desired.
