Greg's Classic Chili

Ingredients

  • 2 small green peppers, about 2 cups diced
  • 1 small yellow onion, about 1.5 cups diced
  • 15 oz can Hunts Tomato Sauce
  • 6 oz can Hunts Tomato Paste
  • 15 oz water
  • 2 (15 oz) cans kidney beans, drained and rinsed
  • 3 tbsp chili powder
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 1 tbsp paprika
  • 1 tsp chipotle powder
  • 1/2 tsp cayenne
  • 1 tbsp salt
  • 1 tsp white pepper
  • 1 tsp baking soda
  • 2 lb ground beef or turkey
Instructions
  1. In a large dutch oven, sauté peppers and onions until translucent and slightly caramelized.
  2. Add chili powder, garlic powder, onion powder, paprika, chipotle, cayenne, salt, and white pepper. Cook 1–2 minutes, stirring constantly.
  3. Add ground meat and brown until nearly cooked through; a slight pink is fine.
  4. Stir in tomato sauce, tomato paste, diced tomatoes, and water.
  5. Bring to a simmer over medium-low heat for 15 minutes, then add drained beans.
  6. Stir in baking soda; sauce will bubble. Continue stirring until bubbling subsides.
  7. Remove from heat and serve hot.
