Ina Garten Shepherd's Pie

This classic Shepherd's Pie uses ground beef, onions, carrots, celery, and mashed potatoes for a hearty, comforting dinner.

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 3 tbsp unsalted butter
  • 1 medium onion, diced
  • 3 medium carrots, peeled and sliced
  • 1 rib celery, sliced
  • 1/2 lb cremini mushrooms, quartered
  • 2 cloves garlic, minced
  • 1 tbsp kosher salt
  • 3/4 tsp dried oregano
  • 3 tbsp tomato paste
  • 1 lb ground beef
  • 1/4 cup low-sodium beef broth
  • 1/2 tsp Worcestershire sauce
  • 4 cups mashed potatoes (see below)
  • 1/4 cup grated Parmesan (optional)


Mashed Potatoes Ingredients
  • 1 1/2 lbs russet potatoes, peeled and quartered
  • 2 tsp kosher salt
  • 3/4 cup whole milk
  • 6 tbsp unsalted butter
  • 2 tbsp chopped fresh flat-leaf parsley


Instructions
  • Preheat oven to 400°F (200°C).
  • Heat olive oil and butter in a large skillet over medium heat.
  • Sauté onion, carrots, celery, and mushrooms until softened, 8–10 minutes.
  • Add garlic, salt, oregano, and tomato paste; cook 1–2 minutes.
  • Stir in ground beef and cook until browned.
  • Add beef broth and Worcestershire sauce; simmer 5 minutes.
  • Meanwhile, boil potatoes in salted water until tender, 15–20 minutes.
  • Drain potatoes and mash with milk, butter, and parsley.
  • Transfer beef mixture to a baking dish and top with mashed potatoes.
  • Sprinkle Parmesan on top if using.
  • Bake 20–25 minutes until golden and bubbling.
  • Let cool 5 minutes before serving.
