This classic Shepherd's Pie uses ground beef, onions, carrots, celery, and mashed potatoes for a hearty, comforting dinner.
Ingredients
- 2 tbsp extra-virgin olive oil
- 3 tbsp unsalted butter
- 1 medium onion, diced
- 3 medium carrots, peeled and sliced
- 1 rib celery, sliced
- 1/2 lb cremini mushrooms, quartered
- 2 cloves garlic, minced
- 1 tbsp kosher salt
- 3/4 tsp dried oregano
- 3 tbsp tomato paste
- 1 lb ground beef
- 1/4 cup low-sodium beef broth
- 1/2 tsp Worcestershire sauce
- 4 cups mashed potatoes (see below)
- 1/4 cup grated Parmesan (optional)
Mashed Potatoes Ingredients
- 1 1/2 lbs russet potatoes, peeled and quartered
- 2 tsp kosher salt
- 3/4 cup whole milk
- 6 tbsp unsalted butter
- 2 tbsp chopped fresh flat-leaf parsley
Instructions
- Preheat oven to 400°F (200°C).
- Heat olive oil and butter in a large skillet over medium heat.
- Sauté onion, carrots, celery, and mushrooms until softened, 8–10 minutes.
- Add garlic, salt, oregano, and tomato paste; cook 1–2 minutes.
- Stir in ground beef and cook until browned.
- Add beef broth and Worcestershire sauce; simmer 5 minutes.
- Meanwhile, boil potatoes in salted water until tender, 15–20 minutes.
- Drain potatoes and mash with milk, butter, and parsley.
- Transfer beef mixture to a baking dish and top with mashed potatoes.
- Sprinkle Parmesan on top if using.
- Bake 20–25 minutes until golden and bubbling.
- Let cool 5 minutes before serving.
