Murphy's Pignoli Cookies

Ingredients

  • 7 oz almond paste
  • 1 cup granulated sugar
  • 1 egg white
  • Pignoli nuts or crushed macadamia nuts
  • Powdered sugar
Directions
  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Crumble almond paste in a mixer.
  • Add sugar and beat 2-4 minutes until smooth.
  • Add egg white and blend 2 minutes; dough should be sticky.
  • Roll dough into balls and coat with pignoli or macadamia nuts.
  • Place on prepared baking sheet and bake until lightly golden.
  • Cool slightly, then dust with powdered sugar before serving.
