Quiche

Makes 2 Quiches

Ingredients:

  • 2 frozen pre-made pie crusts
  • 1 cup cooked mushrooms, chopped
  • 1 cup cooked potatoes, diced
  • 1 cooked yellow onion, chopped
  • 6 large eggs
  • 1 1/2 cups half-and-half (or milk for a lighter option)
  • Salt and pepper to taste
  • Fresh herbs like thyme or parsley for garnish
  • Optional: shredded cheese

Instructions:
  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine mushrooms, potatoes, and onion. Season with salt and pepper. Divide evenly between the two pie crusts.
  • In another bowl, whisk together eggs and half-and-half. Season with salt and pepper.
  • Sprinkle cheese (if using) over the filling in each pie crust, then pour egg mixture evenly over each quiche.
  • Place quiches on a baking sheet and bake 35-40 minutes, until set and lightly golden on top.
  • Let cool 10 minutes before slicing. Garnish with fresh herbs if desired.
