Makes 2 Quiches
Ingredients:
- 2 frozen pre-made pie crusts
- 1 cup cooked mushrooms, chopped
- 1 cup cooked potatoes, diced
- 1 cooked yellow onion, chopped
- 6 large eggs
- 1 1/2 cups half-and-half (or milk for a lighter option)
- Salt and pepper to taste
- Fresh herbs like thyme or parsley for garnish
- Optional: shredded cheese
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine mushrooms, potatoes, and onion. Season with salt and pepper. Divide evenly between the two pie crusts.
- In another bowl, whisk together eggs and half-and-half. Season with salt and pepper.
- Sprinkle cheese (if using) over the filling in each pie crust, then pour egg mixture evenly over each quiche.
- Place quiches on a baking sheet and bake 35-40 minutes, until set and lightly golden on top.
- Let cool 10 minutes before slicing. Garnish with fresh herbs if desired.
